French Riviera - help?

Hi everyone 👋

My husband is a man that never asks for much but has been wanting to visit the French Riviera his whole life. He’s said “I want clear blue ocean steps from my door and a resort that has nice grounds that I’d actually want to spend time on”. - that’s the most I can get out of him, hard to dial it in when it’s just a dream. In any case, I’m taking him there for his 40th and want to start planning now. Hoping to spend around €1,000 a night but willing to go slightly higher for the perfect spot. Looking for any and all recommendations that fit the bill. Thank you!
