Amsterdam in December

I’m from Canada, I’ll be in Ireland end of November until December 3rd.

I want to make the trip a bit longer and worth it and we have a little extra time, so we were hoping to go over to Amsterdam for 3 days.

I have no idea where to start on finding accommodations. It will have to be a hotel, not a hostel (boyfriend has a cpap machine), I’m not opposed to being outside the ‘main’ city area. There seems to be so many options to choose from which is slightly overwhelming me. Any guidance is appreciated. Also not looking to spend an arm and a leg, which may just not be possible lol
