1 week in California for 40th

I’m planning a 40th birthday trip to California (from Florida) this summer with my partner and would love some guidance. My vision is a mix of bucket-list experiences like seeing the redwoods and driving parts of the Pacific Coast Highway paired with a few relaxing days at a semi-luxury resort with beautiful views (either ocean or forest). I’ve been to LA before with friends and have done a quick trip to San Francisco, so I don’t feel the need to fully explore those cities again, though I wouldn’t mind finally seeing the Golden Gate Bridge.

Originally I was thinking of flying into San Francisco and out of LAX, but the more I research, the more overwhelmed I get with options. Would love recommendations for a well paced 7 day itinerary that balances scenery, relaxation, and a bit of adventure.
