Guidance for creating a tracking sheet

Hi folks!!

I am working on trying to create a rooming block sheet where I can put in attendees check in and check out days but only see the available room types for those days. The issue I’m running into is that I have 5 different room types and the amount of those rooms varies on each day. I don’t have a count of attendees yet so I can’t use a countif. If possible I would like to have a dashboard where I can see how many of each room I also have left. I tried to find existing templates but nothing is close to what I’m looking for. Any guidance is greatly appreciated!!
