Denmark - Off the beaten path outdoor adventure ideas

I'm hoping to make the visit to Denmark in late June/early July. I plan on exploring Copenhagen, but does anyone have recommendations for outdoor focused trips outside of the city? I'm thinking unique camping/fishing/etc vibes. Most of what I'm finding online is pretty generic and local to Copenhagen.
