Pull the value of a cell at a given time

I have a sheet that populates from a Microsoft Form and a statistics sheet that does some calculations based on the responses. I would like to track the value of one of the calculations over time by recording its value every day at midnight but I don’t know how to go about that. I thought about redoing the calculation with only the subset of responses before the specified date but it ends up being very slow
