Fall California trip with toddler

My husband and I are considering going to California for our anniversary this October and would be bringing our 3 year old with us. Neither of us have been before but I would love to at least visit the Monterey Bay aquarium and the beaches in San Diego. We would be renting a car and staying 7 days. Where else would you recommend going and for how long should we stay in each place? We’re big into wildlife and great views!
