Travel ideas - countries outside of Europe

Hello everyone. I'm based in Europe (Greece) and am looking to travel to a country outside of Europe this summer/autumn. My budget for flights and accommodation is around 800 euros but I don't mind spending a bit more if I have to. Initial plan was Cabo Verde but I can't find someone to come with me so it's getting postponed (I haven't been to Africa before and I don't want my first time to be solo). What I'm currently thinking of is Uzbekistan, but I've heard it can get pretty hot in the summer so I don't know if it will be ideal to visit then. I've been to a bunch of EU countries, Georgia, Armenia and Japan. I'd love to hear some recommendations and tips!!

*forgot to mention my interests! I like nature, culture, history, great architecture. Not into partying/nightlife
