Looking for fun, beautiful, not too hot, SAFE place to travel with daughter

As a single mom who has not traveled much, it's difficult for me to decide on a place to travel with my teen daughter. She hates the heat & I hate the cold but we love beaches and mountains. We both love being pampered and spoiled (think massages, spas, tours/drivers, chefs, super kind and helpful concierge). Also, we are super clean eaters ie gluten/dairy free, no seed oils, no processed foods, mostly farm to table / meat & veggies. Where's your favorite place to travel that might meet these requirements?
