Torn between Spain or Italy for mid-December trip

Hey, everyone! I’m planning a trip to Europe from roughly December 13-December 22, and I’m torn between these two countries.

My rough itinerary for Spain would be to arrive in Madrid then travel to Toledo and Seville or Granada via train.

I visited Rome + Florence last summer and absolutely loved it! If I were to return to Italy, I’d land in Rome and either head down to Naples and Pompeii or head up to revisit Florence (yes, I love that city that much) and possibly go to Bologna.

I’m mainly interested in the culture, history, and food of the country I’m visiting. I don’t care for nightlife and that stuff. I love visiting museums, churches, and famous landmarks. Bonus points if the place has a medieval, cobble-stone vibe too.

Suggestions + Tips would be appreciated. Thanks!
